Apologies in advance if you've already mined this option...but I would
suggest that, if you know the parish they came from, you should first
check whether LDS has microfilmed those records, in which case you can
search them yourself. Many Catholic records have been microfilmed,
though not all; one West Prussian parish I've researched had birth and
death records but not marriage records filmed. Sometimes I've found
records to be at the archives in Gdansk; sometimes at the local level,
and if that's the case you'd almost need to hire a researcher to look at
them for you.
If you know the town they were from but not the parish that town was
associated with, there are sources I can point you to to help with
that.
"county of Danzig" is very vague, and if that's all the specific you
can get, I'm not sure whether there are indexes that could be searched
even if they are in records at the archives.
I last worked with the regional archives in Gdansk a couple of years
ago and at time they did not have a web or e-mail presence--snail mail
was the only option. I have their address at home if you're interested,
but as noted above, you'd want to contact them as a last
resort--cumbersome and not free.
