Is that same as knockworst? [spelling] A white sausage?
Hi all,
Knackwurst is a kind of Frankfurter (sausage), the peel of which makes a
knacking noise when you bite into it.
It has nothing in common with head cheese except that both are made from meat.
Head cheese is meat in aspic traditionally made from small pieces of meat which
could not very well be used for a great meal. This was usually the meat of the
head of a pig but also of other parts. There are probably hundreds of ways to
make it, depending on regions, avialbility of ingredients and personal tastes.
The meat is cut into pieces of about half an inch in size and mixed with
different vegetables, like carrots, spices and other ingredients (no limits to
creativity), and then cooked with gelating bones etc. until the whole stuff
settles (bones taken out late in the boiling process). Today gelatine is used
instead of the time consuming cooking process.
The head cheese was also a method of preserving the meat for future use. It can
also be made from other meats e. g. calvs meat.
Head cheese is eaten cold and preferably served together with pan fried
potatoes.
