Who is the person listed two people above Lena? It looks like Moses to me
and that letter is exactly the same as the one you are asking about. The
person looks like a family member related to Lena so hopefully that will help.
The rest of the word looks like "ause" to me.

and her destination is Missouri. The next item—the starting place—I can't
read. It looks like "Manse," except that the first letter doesn't look
like the beginning letter of "Missouri."

Could the starting place you mention be Hansa? As in Hansa Hamburg Shipping line, showing the place they boarded the ship.
